ANZAC Cookies - LAKOA style

A firm favourite in our home, this recipe takes inspiration from Ripe Deli (if you know, you know) with a signature LAKOA spin we think you’ll love.

Ingredients

1 cup plain flour
1 1/2 cups rolled oats
1 scoop LAKOA Salted Vanilla Whey Protein Isolate
1/2 cup desiccated coconut
1/2 cup soft brown sugar
1/4 tsp salt
1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground allspice
1/4 cup warm water
1 tsp baking soda
160g butter
1 tbsp golden syrup
1 tsp vanilla extract
100g chocolate drops (we prefer dark chocolate)

Method

Preheat oven to 180 degrees and line two trays with baking paper.

In a large mixing bowl, add the flour, oats, coconut, brown sugar, salt and spices.  Mix until well combined.  In a small bowl mix the warm water and baking soda together.

In a saucepan add the diced butter, golden syrup and vanilla.  Place over a medium heat and melt together, stirring constantly.  Remove from the heat and pour the baking soda mixture into the hot butter, stir well.

Pour the wet mix into the dry mix and stir well to combine.  Let the mixture cool for a minute before stirring through the chocolate.

Roll the mixture into balls and place on the prepared trays.  They expand a lot so leave ample space between them.

Bake for 10-12 minutes, remove from the oven, allow to cool and enjoy!
