LAKOA Dot Cake
Perfect recipe to keep the kids entertained! Dot cake but make it protein-packed.
Ingredients
2 cups plain flour
1 cup LAKOA Salted Vanilla Whey Protein Isolate
2 tsp baking powder
1/2 tsp salt
3 eggs
1 cup milk
1/2 cup greek yoghurt
1/3 cup vegetable oil (or melted butter)
1/2 cup sugar
2 tsp vanilla extract
150g butter (softened)
1.5 cups icing sugar
1-2Tbsp hot water
1/2-1tsp of vanilla essence
1/2 scoop LAKOA Salted Vanilla Whey Protein Isolate
Hundreds and thousands
Method
Cake
Preheat over to 175 degrees. Grease and line a 20cm cake tin. In a large bowl, whisk together the flour, protein powder, baking powder, and salt. In another bowl, whisk the eggs, milk, yoghurt, oil, sugar and vanilla until smooth. Add the wet ingredients to the dry ingredients until just combined (don't overmix). Pour the batter into the prepared tin and smooth on top. Bake for 25-30 minutes, or until a skewer inserted into the cake comes out clean. Let the cake cool in the tin for 10 minutes, then transfer to a wire rack to cool.
Icing
Beat the butter until smooth, pale and fluffy. Gradually beat in the icing sugar and protein powder. Add the vanilla essence, with enough hot water to make a creamy mixture.
Layering
Using your jar, cut circles from the cake and use each one as a layer. Alternate layers of cake and buttercream icing until the jar is full. Finish with a final layer of buttercream icing, then decorate with a sprinkle of hundreds and thousands.
